True story… when you’re developing recipes, you start with an idea and an intention, but you never really know what you’re gonna get.
I can’t tell you how many times some gem of an idea I had turned out to be a total dud.
Not the case with this dish.

Zucchini Noodles with Creamy Lemon Herb Sauce
Quick easy, low-carb summer dinner that is a lighter twist on comfort food and appeals to young
· 1 Sunkist lemon (about 1 tablespoon juice, 1 tsp zest)
· 1/2 cup whole milk (to make even lighter, use ½ cup milk of choice and 2 teaspoons butter
or olive oil)
· 1 tablespoon chopped garlic
· 3-4 cups zucchini noodles
· 1 tablespoon fresh chopped basil
· 1 tablespoon fresh chopped parsley
1. To a medium sauté pan, add the lemon zest, milk, and garlic until simmering.
2. Add the lemon juice and season generously with salt and pepper.
3. To the pan, add the zucchini noodles and coat in the sauce until noodles are just tender.
4. Stir in the basil and parsley, plate, and serve warm.
5. Optional: garnish with extra basil, parsley, and lemon zest.
